A plain and economical onion-and-egg dish made by sautéing plenty of onion in a pan until it turns pink and blending it with egg. This classic breakfast item, made with few ingredients, brings together the onion's slightly sweet flavor with egg.

Sauté the onion

Heat vegetable oil in a pan and add the chopped onions. Sauté over low-medium heat, stirring occasionally, for 8 minutes until the onions turn pink and sweeten.

Add the salt, red pepper flakes and black pepper and mix. Let the spices blend fully with the onion.

Add the egg

Crack the eggs into the pan and cook, stirring gently, until they reach your desired consistency. Careful: don't stir too much. Serve hot.
