Leftover baked salmon from the night before is mixed with spinach and lemon zest, wrapped in thin filo sheets and baked until golden. Inspired by the Irish tradition of making the most of salmon, this parcel gives leftover fish a second life.

How to make it?

Prepare the Filling

Flake the leftover cooked salmon with a fork and mix it in a bowl with the spinach, dill, lemon zest, salt and black pepper.

Brush the Filo

Brush each sheet of filo lightly with olive oil and layer them two sheets at a time.

Roll and Arrange on the Tray

12 min

Place the salmon filling along the edge of the filo layers and roll tightly, arranging the parcels seam-side down on a greased baking tray.

Bake

25 min

Bake in an oven preheated to 190°C until the tops turn golden, about 25 minutes.

Reminder

Work quickly while wrapping the filo; sheets left uncovered dry out and turn brittle. Allergens: contains fish (salmon), gluten (filo pastry).

If you have no leftover salmon, poach a fresh fillet and let it cool; this adds about 10 extra minutes of poaching time to the recipe.

Tarifte 25 dakika fırınlama yazıyor ama benim fırınım altını çabuk aldığı için 20 dakikada yüzeyi fazla koyulaştı, süreyi kısaltmak mı daha doğru olur yoksa tepsiyi üst rafa mı almalıyım? Yufka katları yine de güzel çıtırlaştı.
