Made by soaking boiled eggs in a mixture of soy sauce, vinegar and sesame oil, this appetiser needs no extra stovetop cooking. Served cold, the eggs make a light and practical starter on Chinese tables.

Peel the eggs

Peel the boiled eggs and place them in a bowl, scoring them lightly with a fork so the marinade soaks in easily.

Prepare the marinade

Mix the soy sauce, vinegar, sesame oil and sugar thoroughly in a small bowl.

Let it marinate

35 min

Pour the marinade over the eggs, cover the bowl and chill for at least 35 minutes; the longer it sits, the deeper the flavour goes.

Serve

Halve the marinated eggs and serve cold, sprinkled with the toasted sesame seeds.

Reminder

Make sure the eggs are not too hot when peeling, or the shells will be hard to remove. Allergens: contains egg, soy and sesame.
