Spris is one of Addis Ababa's most beloved street drinks, turned here into a layered fruit ice pop instead of a glass. Avocado, mango and papaya are each blended separately and poured into the mould in layers, so each one freezes on its own for a striped look. With no cream at all, just fruit, it's a heart-healthy treat that keeps well in the freezer.

Step by Step

How to make it?

1

Make the avocado layer

5 min

Blend the avocado with the lime juice, a tablespoon of honey and a little water until smooth, then divide it evenly among the ice pop moulds.

2

Freeze the first layer

60 min

Place the moulds in the freezer with the sticks centred, and let the avocado layer firm up completely.

3

Add the mango layer

45 min

Blend the chopped mango with honey and water, pour it over the set avocado layer, then return the moulds to the freezer until firm.

4

Finish with the papaya layer

180 min

Blend the chopped papaya and pour it over the mango layer, then freeze the moulds for at least 3 hours and unmould without thawing.

Reminder

Freeze each layer for at least 45 minutes until firm before pouring the next one; otherwise the layers will bleed into each other.

Editor's Note Editörün Notu

If you can't find papaya, frozen strawberries work in the same quantity; the layer turns red instead, but the visual effect stays the same.
