This Syrian olive-oil okra dish is made by air-frying okra and combining it with a garlicky tomato sauce, finished with pomegranate molasses. Served chilled, it also makes a good late-night snack.

How to make it?

Prepare the okra

Trim the caps of the fresh okra into a cone shape and rinse.

Air-fry the okra

12 min

Toss the okra with olive oil and arrange in the air fryer basket, frying at 190°C for 12 minutes, shaking occasionally. If you don't have an air fryer, roast for the same time in an oven preheated to 190°C.

Make the sauce

Soften the onion and garlic in olive oil for 5 minutes, then add the tomato and salt and cook for another 8 minutes.

Combine and chill

20 min

Mix the fried okra into the tomato sauce and stir in the pomegranate molasses and lemon juice, then chill for at least 20 minutes and serve cold.

Reminder

When trimming the okra caps into a cone shape, be careful not to pierce the seed pod, or it may turn slimy as it cooks. Contains no listed allergens.
