A practical picnic-basket treat in Germany, Tassenkuchen is made by dividing the batter into small oven-safe jars and baking them quickly. Using whole wheat flour gives the cake a denser, fuller flavour. With their lids on, the jars are easy to carry outdoors.
Whisk the eggs and sugar until pale, then stir in the milk and olive oil.
Sift the whole wheat flour, baking powder and vanilla into the wet mixture and fold to combine.
Divide the batter among small oven-safe jars, filling each two-thirds full, and sprinkle the chopped walnut on top.
Bake the jars in an oven preheated to 180°C for 18 minutes, until a skewer inserted in the centre comes out clean.
Don't fill the jars more than two-thirds full; the batter rises as it bakes and can overflow. Allergens: contains wheat (gluten, flour), milk and dairy, egg and tree nuts (walnut).
