Coconut milk is frozen with a little sugar and lemon juice into a light sorbet carrying the tropical coolness of Thailand. It can be brought to a smooth texture without an ice cream maker by stirring occasionally.

Step by Step

How to make it?

1

Make the Base

10 min

Heat the coconut milk with the sugar, stirring until dissolved, then remove from heat and cool.

2

Freeze

30 min

Stir in the lemon juice, pour into a shallow container and freeze for 30 minutes.

3

Fork-Stir

10 min

Scrape and stir the mixture with a fork as the edges begin to freeze, repeating until smooth.

4

Garnish and Serve

3 min

Spoon the sorbet into bowls and sprinkle with toasted coconut before serving.

Reminder

Be sure to fork-stir the sorbet at least twice while freezing, or it will form hard ice crystals.

Editor's Note Editörün Notu

If you reduce the sugar, the sorbet will freeze a bit harder; just let it sit a few minutes before serving.

30 dakikalık ilk dondurma süresi bende tam kenarların donması için yeterli oldu, çatalla karıştırmak kolay geldi. Toplamda sorbeyi kıvamına getirmek yaklaşık 2 saat sürdü, sonuç gerçekten pürüzsüzdü.
