Named for its slipper-like flattened shape, this köfte cooks in just a few minutes because it's rolled so thin, making it quick to serve at large gatherings. It also works well as a late-night bite or a between-meal snack.

How to make it?

Knead the mixture

Knead the ground beef together with the onion, garlic, breadcrumbs, egg, cumin, pepper flakes, salt and black pepper.

Shape the köfte

Take portions of the mixture and shape them by hand into thin, slipper-like flattened patties.

Fry them

5 min

Heat the oil until very hot and fry the köfte quickly for 5 minutes, until browned on both sides.

Reminder

Really flatten the köfte thin; if they stay thick, the short cooking time won't cook the centre through. Don't add the köfte until the oil is truly hot, or they'll soak up oil and turn heavy. Allergens: contains wheat (gluten, breadcrumbs) and egg.

For a large gathering, you can prepare the mixture ahead and keep it in the fridge; just take it out 15 minutes before cooking so it comes to room temperature.
