Torta de piña is a moist Cuban cake made by folding chopped pineapple into a classic cake batter and baking it, a party-table staple across Cuba. Leftover slices taste even better the next day after resting in the fridge.

Stir in the oil, then sift in the flour, baking powder and salt.
Fold the chopped pineapple into the batter.
Pour the batter into a cake tin and bake in an oven preheated to 175°C for 25 minutes, until a skewer inserted in the centre comes out clean.
Drain the pineapple thoroughly, or the batter will end up too wet and the centre may stay underbaked. If the top darkens too quickly while baking, you can cover it loosely with foil. Allergens: contains wheat (gluten), egg.
If you use fresh pineapple instead of canned, it will be less juicy; in that case, add 2-3 tablespoons of pineapple juice to balance the batter's consistency.
