Yeasted dough is shaped into a ring, dipped in grape molasses syrup and coated in sesame to make this ring, which turns into a sandwich with a kashar filling. Shaping the ring evenly and getting the boil-then-bake sequence right takes real baking skill.

How to make it?

Make the dough

Knead the flour, yeast, warm water, sugar and salt into a dough, cover and let it rise for 20 minutes.

Shape and boil the ring

10 min

Roll the dough into a long strip and pinch the two ends together firmly to form a ring, then boil in molasses-sweetened water for 30 seconds.

Coat in sesame and bake

20 min

Coat the ring in sesame seeds and bake in an oven preheated to 200°C for 20 minutes, until golden and crisp.

Fill the sandwich

5 min

Once cooled, split the ring in half and fill with the kashar cheese and tomato before serving.

Reminder

Pinch the two ends of the ring together firmly, or a loosely joined simit can come apart while baking. Allergens: contains wheat (gluten), sesame and dairy (kashar cheese).

Halkayı şekillendirirken iki ucu birleştirmek ilk seferimde biraz zor geldi, 30 saniyelik haşlama süresini biraz uzatsam kabuk daha mı çıtır olur? Pekmez yerine bal kullansam tat nasıl değişir merak ediyorum.

Haşlama süresini uzatabilirsiniz, 45 saniyeye çıkarmak kabuğu biraz daha koyulaştırır ama çok uzatmayın, hamur suya doyabilir. Bal kullanırsanız pekmezin toprağımsı notunu kaybedersiniz ama daha hafif bir tatlılık elde edersiniz.
