A small, fluffy pancake from Ukrainian breakfast tables, oladki is made by cooking a kefir-based batter into little rounds in the airfryer with barely any oil. Much lighter than the pan-fried version, these mini pancakes pack neatly into a lunchbox too.
Whisk the kefir and egg together in a bowl, then fold in the flour, sugar, baking powder and salt, mixing just until smooth and lump-free without overworking it.
Cover the batter and let it rest on the counter for 15 minutes; this resting time boosts the effect of the baking powder.
Spoon the batter into lightly greased silicone mini muffin moulds, filling each one halfway.
Cook in a preheated airfryer at 180°C for 10 minutes, until puffed and golden. If you do not have an airfryer, the same moulds can be baked in an oven preheated to 200°C for 15 minutes.
Do not overmix the batter, or the air bubbles created by the kefir and baking powder will collapse and the pancakes will not puff up properly. Allergens: contains milk and dairy, wheat (gluten) and egg.
