A Levantine table classic, waraq dawali is filled here with just spiced minced beef, no rice at all. Free of starch, this version offers a filling main course that fits a low-carb diet.

How to make it?

Prepare the filling

Mix the minced beef with the onion, parsley, mint, cumin, salt and black pepper.

Roll the leaves

10 min

Place a teaspoon of filling in the centre of each grape leaf and roll tightly.

Cook

15 min

Pack the rolls tightly into a wide pot, add the water, olive oil and lemon juice, then simmer covered over low heat for 15 minutes.

Reminder

Don't roll the leaves too loosely; the meat filling shrinks as it cooks, and loosely rolled leaves come undone.

Using fresh dill instead of mint shifts the flavour to something fresher; mixing the two half and half also gives a nice balance.
