Vareniki, one of the beloved dumplings of Ukrainian cuisine, is made by filling half-moon shaped dough pieces with potato and kashar cheese, then boiling them and combining them with buttery sautéed onions. With its soft texture and hearty filling, it's served with sour cream at dinner tables.

How to make it?

Knead the dough

Knead the flour, egg, lukewarm water, and salt into a smooth, elastic dough; cover with a damp cloth and let rest for 20 minutes.

Prepare the filling

10 min

Mix the boiled and mashed potatoes with grated kashar cheese, finely chopped onion, and black pepper; adjust the salt of the filling.

Roll out the dough and fill

20 min

Roll out the rested dough thinly with a dusting of flour and cut out circles with the rim of a glass; place some filling in the center of each circle and press the edges firmly to seal into a half-moon shape.

Boil and serve

10 min

Boil the vareniki in plenty of salted boiling water until they float to the surface and cook a few minutes more; drain and toss with butter sautéed with onion, then serve hot with sour cream.

Reminder

Important: After kneading the dough, cover it and let it rest for at least 20 minutes; unrested dough can tear while rolling out and become tough once boiled. Press and pinch the sealing edges firmly with your fingertips, otherwise the filling may leak out during boiling. Allergen: contains wheat (gluten), egg, milk and dairy products.

Adding a pinch of grated kaşar cheese to the filling makes the consistency creamier; if you like, you can also add some chopped dill alongside the sautéed onion.
