Vatrushka, the breakfast pastry of Russian cuisine, is prepared by hollowing out the center of yeasted dough and filling it with sweetened curd cheese. This sweet pastry, whose edges puff up while the center stays plump when baked, is one of the classic flavors of tea time.

Mix the curd cheese, sugar, egg yolk, and vanilla until smooth.
Tear off round pieces of the dough, make a hollow in the center of each, and fill with the curd cheese mixture.
Brush the surfaces with egg yolk and bake in a preheated oven until the edges turn golden.
