Vatrushka, the breakfast pastry of Russian cuisine, is prepared by hollowing out the center of yeasted dough and filling it with sweetened curd cheese. This sweet pastry, whose edges puff up while the center stays plump when baked, is one of the classic flavors of tea time.

How to make it?

Let the dough rise

Knead the flour with warm milk, yeast, sugar, egg, and butter, and let rise until doubled in size.

Prepare the curd filling

Mix the curd cheese, sugar, egg yolk, and vanilla until smooth.

Shape

Tear off round pieces of the dough, make a hollow in the center of each, and fill with the curd cheese mixture.

Bake

Brush the surfaces with egg yolk and bake in a preheated oven until the edges turn golden.

Reminder

Important: When hollowing out the center of the dough, press the edges so they aren't too thin, otherwise the filling may leak out in the oven. Allergen: contains wheat (gluten), egg, milk and dairy products.
