The phá lấu tradition of Vietnamese street food is made here with beef tripe and liver, without any pork, using five-spice and coconut water in a pressure cooker. Hot red chilli gives this low-carb dish its character.

How to make it?

Chop

Chop the tripe and liver into large pieces.

Rub with spice

Rub with the five-spice powder, ginger, garlic and hot red chilli, then transfer to the pressure cooker.

Cook

12 min

Add the coconut water, fish sauce and cinnamon stick, seal the lid, and once it reaches pressure cook for 12 minutes.

Serve

5 min

Release the pressure, remove the cinnamon stick, and serve hot.

Reminder

Be sure to clean and rinse the tripe thoroughly before cooking, or an unwanted odour will remain in the dish. Allergens: contains fish (fish sauce).
