Chop the tripe and liver into large pieces.
Rub with the five-spice powder, ginger, garlic and hot red chilli, then transfer to the pressure cooker.
Add the coconut water, fish sauce and cinnamon stick, seal the lid, and once it reaches pressure cook for 12 minutes.
Release the pressure, remove the cinnamon stick, and serve hot.
Be sure to clean and rinse the tripe thoroughly before cooking, or an unwanted odour will remain in the dish. Allergens: contains fish (fish sauce).
