Sour cherry ice is a refreshing Turkish drink made by freezing freshly squeezed sour cherry juice into thin ice crystals and scraping it with a fork. The scraping creates a snow-like, granita-style texture. It can be added to the breakfast table as a cooling alternative.

How to make it?

Sweeten

Stir the sour cherry juice with the caster sugar and lemon juice, warming gently for 3 minutes until the sugar dissolves.

Freeze

90 min

Pour the mixture into a shallow tray, place it in the freezer and let it sit for 90 minutes until the edges start to freeze.

Scrape

30 min

Scrape the mixture with a fork to create fine, snow-like ice crystals, then return to the freezer for another 30 minutes.

Serve

2 min

Scrape once more with a fork, spoon into glasses and serve immediately.

Reminder

Scrape the mixture before it's fully frozen, while the edges are icy but the centre is still soft; a fully solid block won't scrape.
