Blanch the slices in boiling water three times, changing the water each time to reduce the sharpness.
Boil the sugar and water to prepare a syrup, add the blanched ginger slices, and cook slowly over low heat.
Add the lemon juice and cook until the syrup thickens. Important: it is ready when the slices turn semi-translucent and absorb the syrup; fill sterilized jars while boiling hot and seal them.
Important: To reduce the sharpness of ginger, boil the thin slices in boiling water a few times, changing the water. Contains no flour, milk, or eggs; it is plant-based and gluten-free. Fill sterilized jars with the boiling jam and store in a cool, dark place.
Ginger jam is meant to be eaten in small amounts, for example alongside a slice of bread or a cup of tea. Peeling it thinly and cutting across the fibers helps the slices cook up softer.
