A refreshing Jamaican drink, ginger beer is made by fermenting leftover ginger peels in sugared water. This method makes use of the peels usually thrown away when peeling ginger, so nothing goes to waste.

Step by Step

How to make it?

Make the syrup

10 min

Simmer the ginger peels with the sugar and water for ten minutes.

Let it ferment

20 min

Let the cooled mixture ferment in a loosely covered jar at room temperature for twenty minutes.

Strain and serve

5 min

Strain the mixture, add the lime juice, and serve over ice.

Reminder

Do not seal the fermenting jar too tightly, or the built-up gas can create pressure.

If you want a sharper flavour, you can extend the fermentation by a few hours, though it will turn more tart.

Kavanozun kapağını sıkıca kapattığım için mayalanma sırasında gaz birikti ve açarken köpürüp taştı, mutfağımın yarısı zencefil şurubuyla kaplandı. Kapağı gerçekten gevşek bırakmak gerekiyormuş, bunu bir sonraki denememde mutlaka uygulayacağım.
