A traditional dessert made by cooking rice with saffron in sweetened water, characterized by its distinctive yellow color. Despite its simplicity, it's one of the essential flavors at wedding and circumcision feasts.

How to make it?

Boil the rice

Simmer the washed rice with water over low heat until the grains soften.

Add the sugar and saffron

Add the sugar and the saffron that was soaked beforehand in hot water, and continue cooking while stirring.

Thicken with starch

Mash the starch with a little cold water and add to the mixture; cook, stirring, until it thickens slightly.

Cool and serve

Divide the zerde into bowls and let cool, then serve sprinkled with pomegranate seeds.

Reminder

Important: Instead of adding saffron directly to water, soak it beforehand in a few tablespoons of hot water to release its color, then add it to the mixture — this gives both a more pronounced color and aroma.
