A light cookie with a crumbly texture, made with olive oil instead of butter and eggs. Also suitable for those following a vegan diet, this recipe is a practical choice for tea time with its simple flavor.

Step by Step

How to make it?

1

Mix the wet ingredients

5 min

Thoroughly mix the olive oil, sugar and orange juice together in a bowl.

2

Add the flour

8 min

Sift in the flour and baking powder, and knead until you get a soft dough.

3

Shape and bake

18 min

Pinch off small pieces of dough and roll into balls, coat in sesame seeds if desired, and arrange on the tray. Bake in a preheated oven until the edges turn lightly colored.

Reminder

Allergen: contains wheat (gluten). Important: Don't reduce the amount of olive oil; it's the only binding fat holding the dough together, and reducing it will cause the dough to fall apart and lose its shape.

Editor's Note Editörün Notu

Using a mildly fruity olive oil gives the cookie a more balanced final flavor; sharp, bitter olive oils should be avoided.
