A festive dish from Ukrainian tables, zrazy is made by pounding minced beef patties thin, filling them with boiled egg and onion, rolling them up and frying. The yellow-white filling revealed when sliced gives the plate an elegant look.

Step by Step

How to make it?

1

Prepare the patty mixture

10 min

Knead the minced beef with the beaten egg, breadcrumbs, salt and pepper, divide into 4 equal pieces, and pound each into a thin sheet.

2

Prepare the filling

5 min

Lightly sauté the finely chopped onion and dice the boiled eggs into small cubes.

3

Fill and roll

10 min

Place the onion and egg mixture in the centre of each meat sheet, roll up tightly and seal the ends.

4

Fry

12 min

Fry the rolls in the oil, turning, for 12 minutes until browned on all sides.

Reminder

If freezing the rolls before frying, cook them straight from frozen and add 5 extra minutes to the time. Allergens: contains egg.

Editor's Note Editörün Notu

Chilling the meat before pounding it keeps it from spreading too much and stops it tearing when you roll it.
