A quick dessert fixture on Austrian tables, Zwetschkenröster is made by simmering fresh plums briefly with a cinnamon stick. With no added fat and simple, natural ingredients, this compote is served on its own or alongside other desserts.
Wash the plums, remove the pits and quarter each one.
Put the plums in a saucepan with the water, sugar and cinnamon stick, and simmer over low heat for 10 minutes, until soft and releasing their juices.
Remove the cinnamon stick and serve warm or cold, with a sprinkle of lemon zest if you like.
If your plums are very tart, add another tablespoon of sugar; the sweetness balances the tartness.
Cooking the plums with the skin on is less work and gives the compote a lovely reddish-purple color. You can also stir it into oats for a breakfast bowl.
