The wet burger is an Istanbul street-food favorite made by simmering spiced meatballs in tomato sauce, then tucking them into soft buns with garlic sauce. Wet, saucy fingers from eating it by hand give this sandwich its name as much as its character.

How to make it?

Shape the Meatballs

Mix the ground meat with the grated onion, cumin, and salt. Shape into small meatballs without packing them too tightly.

Simmer in the Sauce

20 min

Thin the tomato paste with water and add half of the crushed garlic. Bring to a boil, add the meatballs, cover, and simmer over low heat for 20 minutes.

Make the Garlic Butter

5 min

Melt the butter and sauté the remaining garlic for 1 minute. Soften the burger buns lightly in a steamer.

Fill and Serve

5 min

Spread the garlic butter inside the buns, fill them with the meatballs and plenty of sauce, and serve immediately.

Reminder

Shape the meatballs without packing them too tightly, or they may become tough in the sauce. Use enough sauce to cover the meatballs so the buns can soak it up. Allergen: contains gluten (bread/wheat flour).

Köfteleri tarifte önerildiği gibi fazla sıkmadan şekillendirdim, yirmi dakika haşlamanın sonunda gerçekten yumuşacık kaldılar; sosu bol tuttuğum için hamburger ekmeği tam kıvamında ıslandı, servisten sonra bile dağılmadı.
