Kumru, a beloved Izmir street food, is made by layering sucuk, sausage, Kashar cheese, and tomato inside a sesame kumru roll, then grilling it until the cheese melts. Hearty and filling, it makes a quick lunch or dinner snack.
Split the kumru rolls lengthwise, thinly slice the sucuk and sausage, and cut the tomato into rounds.
Cook the sucuk and sausage over low heat until the sucuk releases its fat and the slices are lightly browned, then set aside.
Lightly butter the inside of the bread. Layer in the Kashar, browned sucuk and sausage, tomato, and pepper.
Grill the kumru in a sandwich press or on a griddle until the Kashar is fully melted and the bread is lightly toasted. Serve hot.
