A spicy take on the Philippines' sweet-savory spaghetti, this dish is made by finishing leftover boiled chicken in a mashed-banana tomato sauce with chili, then tossing it with boiled pasta. Unlike the classic sweet version, it brings real heat to the table.

Sauté the sauce base

Sauté the onion, garlic and chili pepper in oil until softened.

Cook the banana sauce

Add the mashed banana, tomato paste, sugar and a cup of hot water, then simmer over low heat for 15 minutes until it thickens.

Add the chicken

Stir the shredded chicken and salt into the sauce and cook for another 8-10 minutes to heat the chicken through and let the flavors combine.

Boil the pasta and toss

Meanwhile, boil the pasta in salted water until al dente, drain, toss with the hot sauce and serve.
