Ukraine's classic breakfast, syrniki, gets a lighter twist here by air-frying the cottage cheese dough with very little oil instead of pan-frying it. Sweetened with erythritol, it suits a diabetic diet and travels well for a picnic.

Shape the dough into small round patties and flatten them slightly, dusting with a little flour to keep them from sticking.
Lightly grease the air fryer basket with olive oil and set it to 180°C, then cook the patties in a single layer for 15 minutes until golden, flipping halfway. Without an air fryer, bake them on a tray in an oven preheated to 180°C for the same time.
Do not add too much flour while shaping the dough, or the syrniki will turn tough. Allergens: contains dairy (cottage cheese) and egg; the flour contains wheat (gluten).
Straining the cottage cheese well through cheesecloth helps the dough hold its shape in the air fryer; using wet cottage cheese flattens the syrniki.
