Alycha jam is a thick winter preserve made by slowly cooking Georgia's sour plum variety with sugar until deeply reduced. Because the fruit is so tart, even a modest amount of sugar gives it a balanced sweetness.

How to make it?

Prepare the plums

10 min

Put the pitted plums in a pot with the water and boil over medium heat for 10 minutes.

Reduce with sugar

20 min

Add the sugar and simmer over low heat, stirring constantly, for 20 minutes until thick.

Jar the preserve

5 min

Spoon the hot jam into clean jars and leave to cool.

Reminder

Do not stop stirring; as the mixture thickens it can easily catch on the bottom of the pot. Remove the pits before cooking, or they will give the jam a bitter edge. Allergens: this recipe contains none of the main allergen groups.

Replacing part of the sugar with honey gives the jam a deeper aroma; you may need 5 extra minutes of cooking in that case.

Şekerin yarısını editör notundaki gibi balla değiştirdim ve pişirmeyi 5 dakika uzattım, aroma gerçekten daha derin çıktı ama renk beklediğimden biraz daha koyulaştı, bir dahaki sefere şekeri hiç azaltmadan deneyeceğim.
