Prepare the Quince

Cubed quince is simmered slowly with cinnamon and a reduced amount of sugar until thickened. The fruit's natural pectin makes it easy to reach a rich set even with less sugar, giving a breakfast spread that does not spike blood sugar quickly.
Peel the quince and cut it into cubes, tossing with lemon juice to stop it browning.
Combine the cubed quince with the sugar and cinnamon stick in a wide pot and bring to the boil.
Simmer over low heat, stirring often, for 20 minutes until it turns a deep amber and thickens.
Remove the cinnamon stick, fill sterile jars with the hot marmalade while it is still warm, and cool them upside down.
To check the set, drop a little marmalade onto a cold plate; if it firms up within seconds, it is ready. Since it is made with less sugar, keeping the jars in the fridge is safer.
If you want to cut the sugar even further, adding a pinch of clove alongside the cinnamon balances the reduced sweetness with spice.
