Chak-chak is a festive treat on Kazakh children's tables, made by frying small pieces of dough and coating them in warm honey before pressing into shape. Shaping it quickly before the honey sets and hardens takes a little practice.

Heat the oil over medium heat and fry the dough pieces for 8 minutes until golden, then lift out with a slotted spoon and drain.
Gently warm the honey over low heat, drizzle it over the fried dough, toss quickly and press into a mould to shape.
Cut the dough pieces small and even, or larger ones will fry with a raw centre. Do not overheat the honey; boiling honey turns bitter. Allergens: contains gluten (flour), egg.
Using grape molasses instead of honey gives the treat a darker colour and a faint cinnamon-like undertone.
