Chufa horchata is the traditional drink of Valencia, made by soaking tiger nuts in water overnight, then blending them with sugar and cinnamon and straining. The long soak is what determines the depth of flavour, so this is not a recipe to rush.

How to make it?

Soak

Soak the tiger nuts in plenty of water overnight, for at least 8 hours.

Blend

3 min

Drain the soaked tiger nuts and blend them with fresh water for 3 minutes until smooth.

Strain

7 min

Strain the mixture through a fine cheesecloth, squeezing out the milk from the pulp.

Chill and serve

20 min

Stir the strained milk with the sugar and cinnamon and chill in the refrigerator for at least 20 minutes before serving.

Reminder

Do not blend the tiger nuts without soaking them overnight, if they have not softened enough the milk takes on a bitter taste.
