Add the shredded poached chicken to the sauce and warm through for 4 minutes, seasoning with salt and pepper.
Toss the drained penne with the sauce and serve hot.
Set aside half a cup of the pasta water before draining — if the sauce turns out too thick, you can loosen it with this water. Allergens: contains wheat (gluten).
You can make the same sauce with leftover meatballs or grilled meat instead of chicken — the cooking time stays the same.
