A classic Armenian savoury pastry, boereg is made by layering farmer's cheese and white cheese between sheets of thin filo. Because it holds up well cold in a picnic basket, it's a favourite with families and kids.

How to make it?

Make the filling

Mix the farmer's cheese, white cheese, 1 egg and parsley thoroughly in a bowl.

Layer the filo

Brush a baking tray with melted butter and layer 3 sheets of filo on top, brushing butter between each layer.

Spread and cover the filling

Spread the cheese filling evenly over the filo, cover with the remaining 3 buttered sheets, and fold the edges inward.

Finish the top

7 min

Beat the remaining egg and brush it over the top, then sprinkle with sesame seeds.

Bake

35 min

Bake in an oven preheated to 190°C for 35 minutes until golden on top.

Reminder

Brush plenty of butter between the filo layers or they'll stick together instead of turning crisp. Allergens: contains gluten (filo), milk and dairy, egg and sesame.

If you can't find farmer's cheese, white cheese mixed with strained yoghurt gives a similar texture.

35 dakika fırınlama süresi yazıyor ama benim fırınım güçlü, 28 dakikada üstü koyu altın oldu; siz de kontrol etmenizi öneririm. Susamsız versiyonu da dener misiniz, çocuklarım susamı ayıklıyor da.

Yufkaları 3'er kat halinde dizmek yerine tek tek serseydim daha mı çıtır olurdu? 300 gram lor bize biraz azmış gibi geldi, çocuklar için ikinci pişirişte 400 grama çıkarmayı düşünüyorum.
