Made from prickly pears grown in southern Morocco, this jam simmers the carefully peeled fruit with sugar over low heat until thick. The laborious peeling process makes it one of the region's more prized, costly preserves.

How to make it?

Prepare the fruit

Wearing gloves, peel the prickly pears and cut them into small pieces.

Simmer

60 min

Simmer the chopped fruit with the sugar and lemon juice in a pot, stirring often, for 60 minutes until thick.

Jar it

10 min

Ladle the hot jam into sterilised jars, seal tightly and leave to cool.

Reminder

Always wear thick gloves while peeling prickly pears, their nearly invisible fine spines can lodge in your skin. Stir often while simmering, the thick jam tends to catch on the bottom of the pot. Allergens: none.
