Fideos a la cazuela is a dairy-free Spanish clay-pot dish made by simmering short-cut noodles with tomato, pepper and seafood into a brothy stew. Lightly toasting the noodles before they absorb the sauce keeps the strands from falling apart. Thanks to its olive-oil-heavy sauce, it can also be made safely for anyone eating lactose-free.

How to make it?

Toast the noodles

Toast the noodles in olive oil for 5 minutes until golden, then set them aside in a separate bowl.

Prepare the sauce

Sauté the garlic, onion and red bell pepper in the same pot, add the tomato and cook for 8 minutes.

Simmer the stew

12 min

Add the toasted noodles and fish stock, season with salt, and simmer over low heat for 12 minutes.

Add the shrimp

4 min

Add the shrimp and cook for a final 4 minutes until they turn pink.

Reminder

If you skip toasting the noodles and add them straight to the sauce, they turn doughy and fall apart while cooking — don't skip the toasting step. Allergens: contains gluten (noodles) and shellfish.
