Bibingka, a fixture of Filipino holiday tables, is made with rice flour and coconut milk. Once unmoulded and cut into slices, it fits easily into a lunch box.
Mix the rice flour, sugar and baking powder together.
Add the coconut milk, eggs and melted butter and mix into a smooth batter.
Pour into a greased mould and sprinkle with shredded coconut.
Bake in a preheated oven for 35 minutes.
Remove from the mould and let cool in slices.
Wait for the cake to cool completely before unmoulding it; removing it hot makes the slices fall apart. Allergens: contains egg and dairy (butter).
