Roughly chopped hazelnuts are folded into a cocoa batter in this cake, which can be sliced, wrapped and frozen ahead of time for a brunch table or a lunchbox.

How to make it?

Beat the eggs and sugar

Beat the eggs and sugar together until doubled in volume.

Add the dry ingredients

Sift in the flour, cocoa and baking powder, folding them into the mixture.

Fold in the hazelnuts

Fold the roughly chopped hazelnuts and the oil into the batter.

Bake

Heat the oven to 175°C and bake the batter in the cake tin for 30 minutes, until a skewer comes out clean.

Cool and slice

Let the cake cool completely, slice it, and wrap each slice individually in cling film for the freezer.
