Arrange the slices in a single layer, without overlapping, on a parchment-lined tray and sprinkle cinnamon over them. Dry in an oven preheated to 150°C (300°F), turning occasionally, until the edges crisp up. Once out of the oven, cool on a wire rack; they crisp up further as they cool.
Important: Slicing the apples as thin and evenly as possible ensures the chips dry and crisp up evenly. They may be slightly soft when they come out of the oven, but they crisp up as they cool. Store in an airtight container so they aren't affected by moisture.
Dipping the apples in lemon water and drying them both prevents browning and extends their freshness. Leaving the oven door slightly ajar helps moisture escape and increases crispness.
