Mash the raspberries

Mash the raspberries in a bowl with a fork or blender until you get a smooth puree.

Strain

Strain the raspberry puree through a fine strainer to remove the seeds; add sugar to the remaining liquid and stir well.

Top up with soda

Put ice into the glasses and divide the raspberry syrup among them, then slowly add cold soda water and stir gently.

Garnish with mint leaves and serve immediately; if left standing, the soda will lose its fizz.

Reminder

Important: If using frozen raspberries, let them thaw a little at room temperature first; ice-cold fruit mixed with soda can cause excessive foaming. Raspberry is a seeded fruit; the straining step shouldn't be skipped for a smooth texture.
