Gutab is an Azerbaijani street food made by filling thin, unleavened dough with spinach, parsley and cheese, then folding it into a half-moon shape. Cooked in the airfryer with little oil, this version can be cut into small pieces for kids' lunch boxes.
Mix the flour with the salt and olive oil, then gradually add the warm water to form a soft dough.
Cover the dough and let it rest for 10 minutes.
Mix the chopped spinach, parsley and grated kaşar cheese together.
Roll the dough thin, cut circles, place filling on one half of each and fold into a half-moon shape. Arrange in a lightly oiled airfryer basket and cook at 190°C for 8 minutes, flipping halfway. If you don't have an airfryer, bake them in an oven preheated to 190°C for the same time.
Roll the dough as thin as possible; if it's left thick it turns tough when cooked. Press the edges closed firmly with your fingertip, or the filling will leak out. Allergens: contains wheat (gluten) and dairy (kaşar cheese).
Cutting them into small triangles for kids makes them fit into a lunch box much more easily.
