Boil the beets with their skins on in plenty of water until they soften.
Once the boiled beets have cooled, peel and cut into cubes or slices. Important: peeling the beets while hot may stain your hands, so we recommend using gloves.
Mix the yogurt with crushed garlic and salt.
Drizzle the garlicky yogurt over the chopped beets, add olive oil and, if you like, walnuts on top, then serve.
Important: We recommend wearing gloves while peeling the beets so they don't stain your hands. Allergen: yogurt is a dairy product; those with a milk allergy should be careful.
If you boil the beets a day ahead and keep them in the fridge, you'll only need to prepare the sauce on serving day.
