Made from irga, a wild berry of the Kazakh steppe, this jam is prepared by simmering the small purple berries with sugar and lemon over low heat for hours until thick. Since the fruit is naturally low in pectin, getting the right set takes patience.
Wash and drain the stemmed irga berries.
Simmer the irga with the sugar, lemon juice and water over medium heat for 15 minutes.
Lower the heat and continue simmering for another 70 minutes, skimming the foam, testing the set until it reaches the right consistency.
Ladle the hot jam into sterilised jars and seal the lids tightly.
Skim the foam regularly while simmering, or the jam will look cloudy and grainy. Test the set by dropping a little onto a cold plate and pushing it with your finger; if it wrinkles, it's ready.
Since the fruit is low in pectin, adding the peel of half a lemon to the pot helps the jam set more easily.
