This poğaça, made by filling yeasted yogurt dough with boiled spinach and kaşar cheese, adds color to the breakfast table for greens lovers. With its lightly spiced filling and soft texture, it can be served both hot and warm.

Add flour, oil and salt to the yeasted milk and knead into a soft dough that doesn't stick to your hands.
Cover the dough and let it rise in a warm place until doubled in size.
Mix the drained spinach with grated kaşar cheese and finely chopped onion.
Pinch off pieces of dough and roll into rounds, place the filling in the center, then close and roll into poğaça shape.
Brush the tops with egg yolk and bake in an oven preheated to 190 degrees until golden brown.
Important: Drain the spinach thoroughly before adding it to the filling, or the dough will get wet and sticky. Allergens: contains wheat (gluten), milk and dairy, egg. Caution: don't over-salt the filling, as the kashar cheese already adds salt.
Lightly sautéing the spinach and letting it cool before adding it to the filling makes the poğaça's filling tastier and more cohesive.
