Dorayaki, the classic of Japanese teatime, is made by spreading red bean paste between two soft pancakes. The slight moisture honey adds to the batter keeps the pancakes soft even the next day.

How to make it?

Whisk

Whisk the egg and sugar until pale and foamy, about 5 minutes.

Add the honey

Add the honey and water and mix.

Add the flour

Sift in the flour and baking powder and mix into a smooth batter.

Cook the pancakes

Cook small rounds in a non-stick pan, about 2 minutes per side.

Assemble

Spread the red bean paste between two pancakes and press together.

Reminder

Cook the pancakes over low heat in a non-stick pan; high heat burns the outside while leaving the inside raw. Allergens: contains wheat (gluten) and egg.
