Leftover apricots, peaches and plums from the end of the season are simmered together for a preserve with a more layered flavour than any single fruit alone. Jarred for winter, it is enjoyed at breakfast and as a snack.

How to make it?

Prepare the fruit

Wash the apricots, peaches and plums, remove the pits, and chop into small pieces.

Simmer with sugar

20 min

Simmer the chopped fruit with the sugar and lemon juice in a wide pot over medium heat, stirring occasionally, for 20 minutes.

Check the set

5 min

Drop a spoonful onto a cold plate and run your finger through it; if the line holds, it is set, if not, simmer for 5 more minutes.

Reminder

Ladle the hot mixture into sterilised jars and turn them upside down to cool; this vacuum-seals the lids so it keeps through the winter.

Swapping the plum for quince gives a thicker set; in that case you can shorten the simmering time by a few minutes.
