A sour-sweet meatball dish from Kayseri kitchens, this recipe cooks slim meatballs in a sauce soured with dried apricot and lemon juice in a pressure cooker. With no added sugar in the sauce, it's diabetes-friendly and travels easily in a portable container for a picnic.

How to make it?

Make the meatball mix

Knead the beef mince with the rice, grated onion, salt and pepper, then shape into small finger-sized meatballs.

Make the sauce

Melt the butter and cook with the flour for 2 minutes, then whisk in the hot stock gradually to make a smooth sauce.

Pressure-cook

25 min

Add the meatballs and dried apricots to the sauce, seal the pressure cooker lid and cook over low heat for 25 minutes once it whistles.

Release the pressure

10 min

Remove the pot from the heat and let the steam release naturally for 10 minutes.

Add the sourness

Stir in the lemon juice and cook for 3 more minutes, adjust the salt and serve.

Reminder

Don't press the meatballs too firmly while shaping them, or they will toughen once cooked. Allergens: contains gluten (flour), milk and dairy.
