45 minCover the bone-in chicken thighs with water in a wide pot and bring to a boil, skimming the fat off the surface often, then simmer over low heat for 45 minutes.
Naryn, the hand-cut dough strips of the Kazakh steppe, is made by rolling dough thin, cutting it into wide strips, cooking it in chicken broth and tossing it with shredded chicken. Keeping the broth's fat low keeps the dish nourishing without being too heavy.

Knead the flour, egg, water and salt into a firm dough, roll it thin and cut it into wide strips.
Sweat the thinly sliced onion in a pan with a little water over low heat for 10 minutes.
Boil the dough strips in the chicken broth for 5 minutes and drain. Shred the chicken off the bone and toss it with the strips, sweated onion, dill and black pepper to serve.
