Made by simmering grape juice down into a thick syrup and diluting it with cold water, this sherbet is served as a refreshing drink at Kazakh tables. The syrup keeps well in small bottles, ready to be mixed into a drink whenever needed.
Bring the grape juice to a simmer in a wide pot over medium heat, skimming off any foam occasionally.
Lower the heat and keep simmering, stirring occasionally, until the volume reduces to a third, about one hour; add the lemon juice in the last five minutes.
Fill the hot syrup into sterilised small bottles and leave to cool.
To serve, dilute a measure of the syrup with cold water and serve over ice.
Do not leave the pot unattended while the syrup boils; it is prone to bubbling over. No added sugar is used, relying only on the grape's own natural sweetness.
