A masterful crowd-feeding dish from Moroccan cuisine, spiced lamb kefta tagine is made by shaping spice-kneaded ground lamb into meatballs and slow-cooking them in tomato sauce. This spice-forward meatball's carb-free structure makes the recipe suitable for a ketogenic diet.

Step by Step

How to make it?

1

Prepare the meatball mixture

15 min

Knead the ground lamb with the onion, cumin, cinnamon, chilli flakes and half the salt.

2

Shape

10 min

Shape the mixture into small meatballs.

3

Prepare the sauce

10 min

Simmer the grated tomato in the olive oil with the remaining salt for 10 minutes.

4

Cook the meatballs in the sauce

35 min

Gently place the meatballs into the sauce, cover and cook over low heat for 35 minutes.

5

Serve

2 min

Sprinkle with cilantro and serve hot.

Reminder

Gently place the meatballs into the sauce with a spoon; stirring can cause them to fall apart.

Editor's Note Editörün Notu

Wetting your hands with cold water while kneading the mince makes shaping the meatballs easier without it sticking.

Köftelerin sosta pişme süresi bende 35 dakika yetmedi, ortası hâlâ pembemsiydi ve 10 dakika daha pişirmem gerekti. Kalabalık bir davete hazırladığım için bu gecikme biraz stresliydi.
