Sift the flour, cocoa, baking powder and baking soda into a bowl and mix.
Beat the eggs, sugar and vegetable oil; add the buttermilk, red food coloring and vinegar and keep mixing.
Add the dry ingredients into the wet mixture little by little and mix until no lumps remain, divide between two pans and bake in a preheated oven until a toothpick comes out clean.
Beat the cream cheese and butter, add the powdered sugar and mix until smooth.
Spread the cream between the layers and on top of the cooled cake layers. Note: make sure the cake base has cooled completely before frosting the layers, otherwise the cream may run.
Important: Add the red food coloring to the batter little by little to control the intensity of the color; too much may leave a bitter taste. Allergen: contains gluten (flour), egg, dairy (buttermilk, cream cheese, butter).
Instead of churned ayran, you can sour milk with a few drops of lemon and use that; the acidic liquid is the main element that creates the cake's velvety texture and slightly tangy taste.
