A French-style mango parfait made by freezing mango puree, whipped cream and egg in molds without an ice cream machine. With its velvety texture and tropical aroma, it offers an elegant finish at guest tables.

How to make it?

Puree the mango

Blend the peeled mango with lemon juice until smooth.

Whip the egg whites

Gently warm the egg whites with sugar over a bain-marie, then whisk with a wire whisk until stiff peaks form.

Combine with the cream

Gently fold the whipped cream and mango puree into the egg white foam without deflating it.

Pour into the mold and freeze

Divide the mixture among molds, cover, and freeze for at least six hours, preferably overnight.

Reminder

Important: Warm the egg whites gently with the sugar and whisk over a bain-marie, otherwise there's a risk of raw egg white. Allergen: contains milk and dairy products, egg. Can be kept in the freezer in a sealed container for ten days.

If you dip the mold in warm water for a few seconds while removing the parfait, it comes out easily without losing its shape.
